So is an egg an egg? Are there healthier eggs to eat? They are a great source of protein which is so important after bariatric surgery. They are also packed full of vitamins and minerals.
So as the song says let us start with the geese a laying
Geese eggs are a lot larger than a chicken egg about three times bigger and therefore contain more nutrients per egg. However, goose eggs contain a high amount of cholesterol. The American Heart Association healthy individuals stick to less than 300 mg of cholesterol daily, while those taking cholesterol-lowering medication or diagnosed with high cholesterol consume just 200 mg. One goose egg has 1,227 mg of cholesterol.
Chicken eggs
All chicken eggs contain roughly the same nutrients, with some variation depending on the diet of the chickens . The colour is just a pigment on the outside of the egg and makes no difference to the nutritional quality of the eggs brown eggs aren’t better for us.
Duck eggs
Larger that chicken eggs, they have tougher shells which gives them a longer shelf life. They have a lower water content and so can be a little more rubbery when cooked. They do contain more iron than chicken eggs but are higher in cholesterol
Turkey eggs
Taste is personal of course. But many say that the flavour is not much richer than chicken eggs, but the overall texture is creamier.
Turkey eggs are high in minerals particularly selenium, however, each egg contains 2.9 grams of saturated fatty acids, as well as a whopping 737 milligrams of cholesterol. This is more than twice the daily recommended cholesterol limit outlined by the American Heart Association. Eat turkey eggs as an occasional treat.
Quail eggs
Quails eggs have a higher protein and cholesterol content then chicken eggs, and have a higher yolk to white ratio. The cholesterol that they do contain is mostly the ‘good cholesterol’.
Quail eggs are low in calories and higher in iron than chicken eggs. 5 quail’s eggs equal one chicken egg.
So it would seem for health probably quails eggs are top but they are very fiddly to prepare and then there is a reason why chickens eggs are the most popular.
