On The 3rd Day Of Christmas My True Love Gave to me Three French Hens

On these cold dark evenings I like nothing more than coming in from the cold to a warming dinner, even better when all almost cooked in one pot (slow cooker for me).

Some times after bariatric surgery its making sure the food we eat is good and taste great, we just have a smaller portion.

This is one of the family favorites put it all in the slow cooker and just waited for the dinner to cook its self.

Spiced chicken, spinach & sweet potato stew

Ingredients

3 Sweet potatoes cut up into chucks

190g bag of spinach

1tbsp sun flower oil

1 tin butterbeans

1 tin of chick peas

8 chicken thighs skinless

500ml chicken stock

2 onions chopped

1 red chill chopped

1tsp paprika

½ tsp of ground ginger

400g can chopped tomatoes

2 lemons juiced and zest

Pumpkins seeds to serve and warm naan bread

Put all the ingredients except the spinach in slow cooker and cook for a minimum of 2 hours on stew, I like to cook it slow over a long time so the meat falls from the bone

Just before serving boil pan of water an add the spinach cook for 2 minutes then drain and poor into the casserole.

Serve with a wedge of lemon and a warm naan bread.

This should help with the winter cold, you can add different meats, pheasant, pigeon, quall its all about the taste
